- 1 kg pork ribs
- 10 cloves garlic, minced
- 2 tablespoons vegetable oil
- 2 cinnamon sticks

- 5 star anise
- 1 tablespoon peppercorns
- 5 dried shiitake mushrooms
- 1 tablespoon dark soy sauce
- 2 tablespoons light soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 5 cups water
- 2 cups rice

- Strainer
- Rice cooker
Method
- Preheat oven to 200°C/400°F.
- Place pork ribs on a baking sheet and roast for 20 minutes.
- Heat vegetable oil in a large pot over medium heat.
- Add garlic and sauté until fragrant.
- Add cinnamon sticks, cloves, star anise, and peppercorns, and sauté for 1 minute.
- Add dried shiitake mushrooms and sauté for 2 minutes.
- Add dark soy sauce, light soy sauce, oyster sauce, sugar, and water.
- Bring to a boil, then reduce to a simmer and add the roasted pork ribs.
- Cover and simmer for 1 hour and 30 minutes.
- Rinse rice in a strainer and add to a medium pot with 2 cups of water.
- Cook rice in a rice cooker or on the stove according to package instructions.
- Serve Bak Kut Teh with rice.
Notes
