Ingredients

  • 1 kg pork ribs

  • 1 tablespoon dark soy sauce

  • 5 cups water
  • 2 cups rice

Method

  1. Preheat oven to 200°C/400°F.
  2. Place pork ribs on a baking sheet and roast for 20 minutes.
  3. Heat vegetable oil in a large pot over medium heat.
  4. Add garlic and sauté until fragrant.
  5. Add cinnamon sticks, cloves, star anise, and peppercorns, and sauté for 1 minute.
  6. Add dried shiitake mushrooms and sauté for 2 minutes.
  7. Add dark soy sauce, light soy sauce, oyster sauce, sugar, and water.
  8. Bring to a boil, then reduce to a simmer and add the roasted pork ribs.
  9. Cover and simmer for 1 hour and 30 minutes.
  10. Rinse rice in a strainer and add to a medium pot with 2 cups of water.
  11. Cook rice in a rice cooker or on the stove according to package instructions.
  12. Serve Bak Kut Teh with rice.

Notes

Bak Kut Teh can be made with spare ribs or pork belly instead of pork ribs. For a spicier version, add chopped chili peppers or chili flakes.
