Ingredients

  • 2 cups of long-grain rice
  • 1 pound of beef
  • 1 large onion

  • 1 can of diced tomatoes
  • 2 tablespoons of vegetable oil
  • 1 tablespoon of smoked paprika
  • 1 tablespoon of curry powder
  • 1 teaspoon of thyme
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 scotch bonnet pepper (optional)

Method

  1. Preheat your oven to 350°F.
  2. Wash the rice in cold water and drain it in a colander.
  3. Season the beef with salt, pepper, and smoked paprika.
  4. Heat up the vegetable oil in a large pot over medium-high heat.
  5. Add the seasoned beef and brown on all sides for about 5 minutes.
  6. Remove the beef from the pot and set aside.
  7. Add the diced onions, garlic, ginger, and scotch bonnet pepper to the pot and cook for about 2 minutes.
  8. Add the tomato paste, thyme, curry powder, and diced tomatoes to the pot and stir well.
  9. Add the beef broth and bring to a boil.
  10. Add the rice to the pot and stir well.
  11. Add the beef back to the pot and stir gently.
  12. Cover the pot tightly with a lid and put it in the oven for 30-35 minutes.
  13. Remove the pot from the oven and let it rest for 5 minutes.
  14. Fluff the rice with a fork and serve hot.

Notes

  • You can use any type of beef for this recipe, but I recommend using chuck roast or stew meat.
  • If you don't have an oven-safe pot, you can cook the rice on the stovetop over low heat until the rice is cooked through.
  • For a spicier dish, you can add more scotch bonnet pepper or use a hotter pepper.
