- 2 cups of long-grain rice
- 1 pound of beef
- 1 large onion
- 2 garlic cloves

- 2 cups of beef broth
- 1 can of diced tomatoes
- 2 tablespoons of vegetable oil
- 1 tablespoon of smoked paprika
- 1 tablespoon of curry powder
- 1 teaspoon of thyme
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 scotch bonnet pepper (optional)

Method
- Preheat your oven to 350°F.
- Wash the rice in cold water and drain it in a colander.
- Season the beef with salt, pepper, and smoked paprika.
- Heat up the vegetable oil in a large pot over medium-high heat.
- Add the seasoned beef and brown on all sides for about 5 minutes.
- Remove the beef from the pot and set aside.
- Add the diced onions, garlic, ginger, and scotch bonnet pepper to the pot and cook for about 2 minutes.
- Add the tomato paste, thyme, curry powder, and diced tomatoes to the pot and stir well.
- Add the beef broth and bring to a boil.
- Add the rice to the pot and stir well.
- Add the beef back to the pot and stir gently.
- Cover the pot tightly with a lid and put it in the oven for 30-35 minutes.
- Remove the pot from the oven and let it rest for 5 minutes.
- Fluff the rice with a fork and serve hot.
Notes
- You can use any type of beef for this recipe, but I recommend using chuck roast or stew meat.
- If you don't have an oven-safe pot, you can cook the rice on the stovetop over low heat until the rice is cooked through.
- For a spicier dish, you can add more scotch bonnet pepper or use a hotter pepper.
