Ingredients

  • 1 kg basmati rice
  • 1 kg chicken or mutton
  • 3 onions

  • 4-5 cardamom pods
  • 2 cinnamon sticks
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala powder
  • Salt to taste
  • 1 cup yogurt
  • 1/2 cup milk
  • 1/2 cup ghee or oil
  • Fried onions and chopped coriander leaves for garnish

Method

  1. Wash the rice in cold water and soak it in water for 20-30 minutes.
  2. In a large pot, heat the ghee or oil and add the bay leaves, cloves, cardamom, cinnamon, and cumin seeds. Let them splutter for a few seconds.
  3. Add the sliced onions and fry until they turn golden brown.
  4. Add the ginger-garlic paste and sauté for a few minutes.
  5. Add the chopped tomatoes and cook until they turn soft and mushy.
  6. Add the chicken or mutton and cook until it turns brown. Add salt, turmeric powder, red chili powder, and garam masala powder. Mix well and cook for 5-10 minutes.
  7. Add the yogurt and milk and mix well. Cover the pot and cook for 20-25 minutes or until the meat is tender.
  8. In a separate pot, boil water and add the soaked rice. Cook until the rice is 80% done. Strain the rice and keep it aside.
  9. Preheat the oven to 180 degrees Celsius.
  10. In a large baking dish, layer the rice and meat mixture. Cover the top with fried onions and chopped coriander leaves. Cover the dish with foil and bake for 15-20 minutes.
  11. Remove the foil and bake for another 10-15 minutes or until the rice is fully cooked.
  12. Garnish with more fried onions and chopped coriander leaves. Serve hot with raita or curry.

Notes

  • You can add more or less spices according to your taste.
  • You can also add vegetables like potatoes, carrots, and peas to the dish.
  • If you don't have an oven, you can also cook the biryani on the stovetop. Just place a tawa or griddle on the stove and place the baking dish on top. Cook on low heat for 30-40 minutes.
