- 1 pound dried red beans, rinsed and sorted
- 1 pound smoked sausage, sliced into rounds
- 1 large onion, diced

- 2 bay leaves
- 1 tablespoon dried thyme
- 1 tablespoon smoked paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon salt
- 1 teaspoon black pepper
- 6 cups chicken broth
- 4 cups cooked white rice

Method
- In a large pot or Dutch oven, sauté the sausage over medium-high heat until browned, about 5 minutes. Remove the sausage from the pot and set aside.
- Add the onion, bell pepper, celery, and garlic to the pot and sauté until the vegetables are soft and translucent, about 5 minutes.
- Add the bay leaves, thyme, smoked paprika, cayenne pepper, salt, and black pepper to the pot and stir to combine.
- Add the red beans and chicken broth to the pot and stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and let simmer for 2 hours, stirring occasionally.
- Remove the bay leaves from the pot and discard.
- Use a wooden spoon to mash some of the beans against the side of the pot to thicken the mixture.
- Add the sausage back to the pot and stir to combine.
- Serve the red beans and sausage over a bed of cooked white rice.
- Garnish with sliced green onions or chopped parsley, if desired.
Notes
