Ingredients

  • 1 pound dried red beans, rinsed and sorted

  • 2 bay leaves
  • 1 tablespoon dried thyme

  • 6 cups chicken broth
  • 4 cups cooked white rice

Method

  1. In a large pot or Dutch oven, sauté the sausage over medium-high heat until browned, about 5 minutes. Remove the sausage from the pot and set aside.
  2. Add the onion, bell pepper, celery, and garlic to the pot and sauté until the vegetables are soft and translucent, about 5 minutes.
  3. Add the bay leaves, thyme, smoked paprika, cayenne pepper, salt, and black pepper to the pot and stir to combine.
  4. Add the red beans and chicken broth to the pot and stir to combine.
  5. Bring the mixture to a boil, then reduce the heat to low and let simmer for 2 hours, stirring occasionally.
  6. Remove the bay leaves from the pot and discard.
  7. Use a wooden spoon to mash some of the beans against the side of the pot to thicken the mixture.
  8. Add the sausage back to the pot and stir to combine.
  9. Serve the red beans and sausage over a bed of cooked white rice.
  10. Garnish with sliced green onions or chopped parsley, if desired.

Notes

This recipe can easily be made in a slow cooker. Simply sauté the sausage and vegetables in a skillet, then transfer everything to a slow cooker and cook on low for 6-8 hours.
