- 1 can (10.75 ounces) condensed cream of mushroom soup
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese

Method
- Preheat the oven to 350°F.
- In a saucepan, bring the water to a boil. Add the rice and stir. Cover and simmer for 18-20 minutes or until the rice is tender and the water is absorbed.
- In a large mixing bowl, combine the cooked rice, diced tomatoes, cream of mushroom soup, chopped onion, chopped green bell pepper, garlic powder, dried basil, salt, and black pepper. Mix well.
- Pour the mixture into a 9x13 inch baking dish and spread it out evenly. Cover the dish with foil.
- Bake for 35-40 minutes. Remove the foil and sprinkle the shredded cheddar cheese on top. Bake for an additional 5-10 minutes or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
Notes
