- 2 cups of basmati rice
- 1 pound of meat (chicken, lamb, or beef)
- 2 onions, chopped
- 3 cloves of garlic, minced
- 1 tablespoon of ginger, minced
- 1 can of diced tomatoes
- 2 tablespoons of curry powder
- 1 teaspoon of cumin
- 1 teaspoon of coriander
- 1 teaspoon of turmeric
- 1 teaspoon of salt
- 4 cups of water
- 2 tablespoons of vegetable oil
- 1 cup of frozen peas
- 1 cup of chopped carrots
- 1 cup of chopped potatoes

Method
- Wash the basmati rice and soak it in water for 30 minutes.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and cook until they are translucent.
- Add the minced garlic and ginger and cook for another 2 minutes.
- Add the meat to the pot and cook until browned.
- Add the can of diced tomatoes, curry powder, cumin, coriander, turmeric, and salt. Stir to combine.
- Add the frozen peas, chopped carrots, and chopped potatoes to the pot.
- Drain the water from the basmati rice and add it to the pot with 4 cups of water. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot.
- Simmer for approximately 20-25 minutes or until the rice is cooked and the liquid has been absorbed.
- Remove the pot from the heat and let it sit for 5 minutes.
- Fluff the rice with a fork and serve.
