Ingredients

Method

1. Wash the rice in cold water until the water runs clear. Soak the rice in cold water for 30 minutes. 2. Heat oil or ghee in a large pot over medium heat. 3. Add cumin seeds, cinnamon stick, cloves, and cardamom pods to the pot and sauté for a minute. 4. Add chopped onions, garlic, ginger, and green chilies to the pot and sauté until the onions turn translucent. 5. Add biryani masala powder, turmeric powder, and salt to the pot and sauté for a minute. 6. Add the chicken or lamb pieces (or mixed vegetables) to the pot and sauté until they are browned on all sides. 7. Add plain yogurt to the pot and mix well. 8. Drain the soaked rice and add it to the pot. Mix well. 9. Add 4 cups of water to the pot and bring it to a boil. 10. Reduce the heat to low, cover the pot with a lid, and let it cook for 20-25 minutes or until the rice is fully cooked. 11. Once the rice is cooked, turn off the heat and let it rest for 5-10 minutes. 12. Fluff the rice with a fork and serve hot.
