  • 1 tsp coriander seeds

Method

  1. Wash and soak the rice in water for 30 minutes.
  2. In a large pot, heat 1/4 cup of oil over medium-high heat.

  4. In the same pot, add the chopped vegetables and fry for 5-7 minutes.
  5. Add the cumin, coriander, and fennel seeds and fry for another 2 minutes.
  6. Add the turmeric powder, red chili powder, and garam masala powder and fry for another 2 minutes.
  7. Add the chopped tomato and cook until it becomes soft and mushy.
  8. Add the soaked rice and fry for 2-3 minutes.
  9. Add 4 cups of water and salt to taste. Stir well and bring to a boil.
  10. Reduce the heat to low, cover the pot with a lid, and let it cook for 15-20 minutes or until the rice is cooked and the water has evaporated.
  11. In a frying pan, heat the remaining 1/4 cup of oil over medium-high heat.
  12. Add the fried onions and fry until they become crispy.
  13. Once the rice is cooked, turn off the heat and let it sit for 5 minutes.
  14. Fluff the rice with a fork and transfer it to a serving dish.
  15. Sprinkle the fried onions on top of the rice and serve hot with raita or any other side dish of your choice.
