Description

  • 2 tablespoons apricot jam
  • Salt and pepper to taste
  • 4 cups cooked yellow rice

Method

  1. Preheat the oven to 350°F (180°C).
  2. Heat the skillet over medium heat and add the chopped onion and minced garlic. Cook until the onion is translucent.
  3. Add the minced beef or lamb to the skillet and cook until browned.
  4. Add the curry powder, turmeric, cumin, coriander, and sugar to the skillet. Cook for 2-3 minutes, stirring constantly.
  5. Crumble the soaked bread into the skillet and mix well.
  6. In a separate bowl, beat the eggs and milk together.
  7. Add the egg mixture to the skillet and mix well.
  8. Stir in the raisins, slivered almonds, and apricot jam.
  9. Season with salt and pepper to taste.
  10. Transfer the mixture to a baking dish and bake in the preheated oven for 30-40 minutes, until the egg topping is set and browned.
  11. Serve with yellow rice.

Notes

Bobotie can be made with beef, lamb, or even ostrich meat. You can also add chopped apples or chutney to the filling for extra flavor.
