- 1 cup of long-grain rice
- 2 tablespoons of olive oil
- 1 medium onion, finely chopped
- 1 red bell pepper, finely chopped
- 2 cloves of garlic, minced
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- 1 teaspoon of paprika
- 1 can of diced tomatoes
- 2 cups of chicken or vegetable broth
- Salt and pepper to taste

- A large saucepan with a tight-fitting lid
- A knife and cutting board
- A wooden spoon
Method
- Heat the olive oil in the saucepan over medium heat.
- Add the onion and red pepper and sauté for 5-7 minutes, or until they become soft and translucent.
- Add the garlic and spices, stirring constantly for 1-2 minutes or until fragrant.
- Add the rice and stir until it is evenly coated with the onion and pepper mixture.
- Add the diced tomatoes and broth and stir well.
- Bring the mixture to a boil, then reduce the heat to low and cover the saucepan with a tight-fitting lid.
- Simmer the rice for 20-25 minutes, stirring occasionally, or until the rice is tender and the liquid has been absorbed.
- Remove the saucepan from the heat and let it sit for 5-10 minutes before fluffing the rice with a fork.
- Add salt and pepper to taste.

Notes
