Cook Time

15 minutes

Ingredients

  • 2 cups cooked rice
  • 1 lb. pork, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 red bell pepper, diced
  • 1 cup frozen peas
  • 2 eggs, beaten
  • 2 tbsp. soy sauce
  • 1 tbsp. oyster sauce
  • 1 tsp. sesame oil
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Oil for cooking

Equipment

  • Wok or large skillet
  • Cutting board and knife
  • Bowl for mixing eggs
  • Spatula

Method

  1. Heat oil in a wok or large skillet over medium-high heat. Add diced pork and cook until browned and cooked through, about 5-7 minutes. Remove from pan and set aside.
  2. Add more oil to the pan if needed, and add onion and garlic. Cook for 2-3 minutes until softened.
  3. Add diced carrot and red bell pepper and cook for another 2-3 minutes until slightly softened.
  4. Add frozen peas and cook for another 1-2 minutes until heated through.
  5. Push the veggies to one side of the pan and pour beaten eggs into the other side. Scramble the eggs until cooked through, then mix with the veggies.
  6. Add cooked rice to the pan and stir to combine with the veggies and eggs.
  7. Add soy sauce, oyster sauce, sesame oil, and salt and pepper to taste. Stir to combine.
  8. Add the cooked pork back to the pan and stir to combine.
  9. Top with chopped green onions and serve hot.

Notes

  • This recipe is easily customizable - feel free to add or substitute other veggies or proteins as desired.
  • Using cold, leftover rice works best for fried rice, as it won't become mushy or sticky when cooked.
  • For added flavor, try marinating the pork in a mixture of soy sauce, garlic, and ginger before cooking.

Recipe Tips

  • Make sure your pan or wok is hot before adding ingredients - this will help prevent sticking and ensure a nice sear on the pork.
  • Cut all your veggies into small, uniform pieces for even cooking.
  • Don't overcook the rice - you want it to be fluffy and separate, not mushy.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
