Method

  1. Bring a large pot of salted water to a boil. Add rice noodles and cook for 3-4 minutes or until tender. Drain noodles and rinse with cold water to stop cooking. Set aside.
  2. Heat vegetable oil in a wok or large skillet over high heat. Add sliced bell peppers and onions and stir fry for 2-3 minutes or until tender-crisp.
  3. Add minced garlic, sliced mushrooms, shredded carrots, and snow peas to the wok. Stir fry for an additional 2-3 minutes or until veggies are tender.
  4. In a small bowl, whisk together soy sauce, oyster sauce, brown sugar, and sesame oil. Pour sauce over veggies and stir to combine.
  5. Add cooked rice noodles to the wok and toss everything together until evenly coated in sauce. Season with salt and pepper to taste.
  6. Remove from heat and serve hot.

Notes

For a spicier version, add a teaspoon of red pepper flakes to the sauce. You can also add protein such as chicken, shrimp, or tofu to make it more filling.
