- 8 oz. rice noodles
- 2 tbsp. vegetable oil
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 2 cloves garlic, minced
- 1 cup sliced mushrooms
- 1 cup shredded carrots
- 1 cup snow peas
- 2 tbsp. soy sauce
- 2 tbsp. oyster sauce
- 1 tbsp. brown sugar
- 1 tsp. sesame oil
- Salt and pepper to taste
Equipment
- Wok or large skillet
- Large pot for boiling noodles
- Colander
- Cutting board and knife
- Measuring cups and spoons
Method
- Bring a large pot of salted water to a boil. Add rice noodles and cook for 3-4 minutes or until tender. Drain noodles and rinse with cold water to stop cooking. Set aside.
- Heat vegetable oil in a wok or large skillet over high heat. Add sliced bell peppers and onions and stir fry for 2-3 minutes or until tender-crisp.
- Add minced garlic, sliced mushrooms, shredded carrots, and snow peas to the wok. Stir fry for an additional 2-3 minutes or until veggies are tender.
- In a small bowl, whisk together soy sauce, oyster sauce, brown sugar, and sesame oil. Pour sauce over veggies and stir to combine.
- Add cooked rice noodles to the wok and toss everything together until evenly coated in sauce. Season with salt and pepper to taste.
- Remove from heat and serve hot.
Notes
