Ingredients

For the rice:
  • 2 cups Basmati Rice
  • 4 cups Water
  • 1 Bay Leaf
  • 4 Cardamom Pods
  • 2 Cinnamon Sticks
  • 1 tsp Salt
For the biryani:
  • 1 lb Meat (chicken or lamb)
  • 2 cups chopped Vegetables (carrots, potatoes, green beans, peas)
  • 1 Onion, sliced
  • 2 Tomatoes, chopped
  • 1 tbsp Ginger-Garlic Paste
  • 1 tsp Turmeric Powder
  • 1 tsp Red Chili Powder
  • 1 tsp Garam Masala Powder
  • 1/2 cup Yogurt
  • 1/4 cup Mint Leaves, chopped
  • 1/4 cup Cilantro Leaves, chopped
  • 2 tbsp Ghee or Oil
  • Salt, to taste

Method

1. Rinse the Basmati Rice in cold water until the water runs clear. Soak the rice in water for 30 minutes. 2. In a large pot, bring 4 cups of water to a boil. Add the Bay Leaf, Cardamom Pods, Cinnamon Sticks, and Salt. Drain the Basmati Rice and add it to the pot. Stir well and cover the pot. Reduce the heat to low and let it cook for 15-20 minutes until the rice is cooked and fluffy. 3. In a skillet, heat the Ghee or Oil over medium heat. Add the sliced Onion and cook until it is golden brown. 4. Add the Meat to the skillet and cook until it is browned on all sides. 5. Add the Ginger-Garlic Paste, Turmeric Powder, Red Chili Powder, and Garam Masala Powder. Stir well and cook for 2-3 minutes. 6. Add the chopped Tomatoes and cook until they are soft and mushy. 7. Add the chopped Vegetables, Yogurt, Mint Leaves, and Cilantro Leaves. Stir well and cook for 5-7 minutes until the Vegetables are cooked. 8. In a large mixing bowl, layer the cooked Basmati Rice and the Meat-Vegetable mixture. Cover the bowl with aluminum foil and let it cook on low heat for 10-15 minutes. 9. Serve hot with Raita or Salad.
