For the Braised Duck:- 1 whole duck (about 1.5 kg)
- 2 tablespoons vegetable oil
- 2 slices ginger
- 3 cloves garlic, minced
- 1/2 cup Shaoxing wine
- 1/2 cup soy sauce
- 1/2 cup dark soy sauce
- 1/4 cup rock sugar
- 4 cups water
- 3 stalks scallions, cut into 2-inch pieces
- 2 cups jasmine rice
- 1 cup diced yam
- 2 cups chicken stock
- 2 cloves garlic, minced
- 2 slices ginger
- 1 teaspoon salt
- 1 tablespoon vegetable oil

Method
For the Braised Duck:- Clean the duck and cut it into large pieces.
- Heat the vegetable oil in a Dutch oven over medium heat. Add the ginger and garlic and cook until fragrant, about 1 minute.
- Add the duck pieces and cook until browned on both sides, about 5 minutes per side.
- Add the Shaoxing wine, soy sauce, dark soy sauce, rock sugar, and water. Bring to a boil.
- Reduce the heat to low and simmer for 3 hours, or until the duck is tender and the sauce has thickened.
- Add the scallions and cook for another 5 minutes.
- Rinse the rice in cold water until the water runs clear.
- Heat the vegetable oil in a small pot over medium heat. Add the garlic and ginger and cook until fragrant, about 1 minute.
- Add the rice, diced yam, chicken stock, and salt. Stir to combine.
- Bring to a boil, then reduce the heat to low and cover the pot.
- Cook for 18-20 minutes, or until the rice is cooked through.
- Fluff the rice with a fork before serving.
