Ingredients

  • 1 cup beaten rice (poha)

  • Salt to taste

Method

  1. Place the beaten rice in a large bowl and rinse it with water for a few seconds. Drain the water using a strainer and keep the beaten rice aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the mustard seeds and cumin seeds and let them splutter for a few seconds.
  3. Add the chopped onion and green chili and sauté for 2-3 minutes or until the onion turns translucent.
  4. Add the turmeric powder and salt and mix well.
  5. Add the drained beaten rice to the skillet and mix well. Cook for 5-7 minutes or until the beaten rice is heated through and turns slightly crispy.
  6. Turn off the heat and add the lemon juice. Mix well.
  7. Garnish with chopped coriander leaves and serve hot.

Notes

  • You can add other vegetables like peas, carrots and potatoes to this dish to make it more nutritious.
  • If you want a spicier version of this dish, you can add more green chilies or red chili powder.
  • If you want a sweeter version of this dish, you can add sugar or jaggery.
