Ingredient

- 1 pound beef, cubed - 1 can black beans, drained and rinsed - 1 cup white rice - 1 onion, chopped - 1 green bell pepper, chopped - 2 cloves garlic, minced - 1 tablespoon olive oil - Salt and pepper to taste - 1 teaspoon cumin - 1 teaspoon chili powder - 1/2 teaspoon paprika - 1/4 teaspoon cayenne pepper - 8 large tortillas - Shredded cheese, sour cream, and salsa for serving (optional)

Equipment

Method

1. In a small saucepan, bring 2 cups of water to a boil. Add the rice and reduce heat to low. Cover and simmer for 18-20 minutes, or until the rice is tender and the water has been absorbed. 2. While the rice is cooking, heat the olive oil in a large skillet over medium-high heat. Add the beef and season with salt and pepper. Cook for 5-7 minutes, or until browned on all sides. 3. Add the onion, bell pepper, and garlic to the skillet with the beef. Cook for an additional 5 minutes, or until the vegetables are soft and the beef is cooked through. 4. Add the black beans, cumin, chili powder, paprika, and cayenne pepper to the skillet. Stir to combine and cook for 2-3 minutes, or until the beans are heated through. 5. To assemble the burritos, place a tortilla on a plate. Spoon a generous amount of the beef and bean mixture onto the center of the tortilla. Top with a spoonful of rice and any desired toppings, such as shredded cheese, sour cream, and salsa. 6. Fold the sides of the tortilla in towards the center, then roll up from the bottom to create a burrito shape. 7. Repeat with the remaining tortillas and filling.
