  • 1 pound dried red beans
  • 1 pound smoked sausage, sliced

  • 1 tablespoon dried thyme
  • 1 tablespoon smoked paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 8 cups water
  • 4 cups cooked white rice

Method

  1. Sort and rinse the red beans, removing any debris or stones.
  2. In a Dutch oven or large pot, sauté the sliced sausage over medium heat until browned on both sides. Remove from the pot and set aside.
  3. Add the diced onion, green pepper, celery, and garlic to the pot and sauté until softened, about 5 minutes.
  4. Add the bay leaves, thyme, smoked paprika, cayenne pepper, and salt to the pot and stir to combine.
  5. Add the red beans and water to the pot and stir to combine.
  6. Bring the mixture to a boil, then reduce the heat to low and simmer for 1 1/2 to 2 hours, or until the beans are tender and the mixture has thickened.
  7. Remove the bay leaves from the pot and discard.
  8. Using a wooden spoon or spatula, mash some of the beans against the side of the pot to thicken the mixture.
  9. Add the reserved sausage back to the pot and stir to combine.
  10. Serve the red beans over a bed of white rice.

Notes

For a vegetarian version, omit the sausage and use vegetable broth instead of water. You can also add diced tomatoes or hot sauce for extra flavor.
