Method
- Sort and rinse the red beans, removing any debris or stones.
- In a Dutch oven or large pot, sauté the sliced sausage over medium heat until browned on both sides. Remove from the pot and set aside.
- Add the diced onion, green pepper, celery, and garlic to the pot and sauté until softened, about 5 minutes.
- Add the bay leaves, thyme, smoked paprika, cayenne pepper, and salt to the pot and stir to combine.
- Add the red beans and water to the pot and stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and simmer for 1 1/2 to 2 hours, or until the beans are tender and the mixture has thickened.
- Remove the bay leaves from the pot and discard.
- Using a wooden spoon or spatula, mash some of the beans against the side of the pot to thicken the mixture.
- Add the reserved sausage back to the pot and stir to combine.
- Serve the red beans over a bed of white rice.
Notes
