Ingredients

For the chicken:
  • 1 whole chicken, cut into pieces or 4 boneless chicken thighs

  • 1 tablespoon Shaoxing wine
  • 1 teaspoon salt
  • 4 cups water
For the rice:
  • 2 cups Jasmine rice, rinsed and drained
  • 2 cups chicken broth
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, sliced
  • 1 teaspoon salt
For the sauce:
  • 1/4 cup light soy sauce
  • 1/4 cup dark soy sauce
  • 1-inch piece of ginger, grated
  • 2 cloves garlic, minced
  • 2 tablespoons sesame oil
  • 2 tablespoons sugar
  • 1/4 cup chicken broth
For the toppings:
  • Sliced cucumbers
  • Sliced scallions
  • Sliced red chili peppers
  • Cilantro leaves

Method

Step 1: Cook the chicken

  1. In a large pot, add the chicken, ginger, garlic, sesame oil, soy sauce, Shaoxing wine, salt, and water. Bring to a boil over high heat.
  2. Reduce the heat to low, cover the pot and simmer for 30 minutes or until the chicken is cooked through.
  3. Remove the chicken from the pot and place it in a large bowl. Reserve the chicken broth for later use.

Step 2: Cook the rice

  1. Heat the vegetable oil in a medium pot over medium-high heat. Add the garlic and ginger and cook until fragrant.
  2. Add the rice and salt and stir to combine. Cook for 1-2 minutes or until the rice is lightly toasted.
  3. Add the chicken broth and bring to a boil. Reduce the heat to low, cover the pot and simmer for 15-20 minutes or until the rice is cooked through.
  4. Remove from heat and let the rice sit for 5 minutes before fluffing it with a fork.

Step 3: Prepare the sauce

  1. In a small bowl, mix together the light soy sauce, dark soy sauce, ginger, garlic, sesame oil, sugar, and chicken broth.
  2. Stir until the sugar is dissolved.

Step 4: Assemble the dish

  1. Serve the chicken with the rice and sauce on the side.
  2. Garnish with sliced cucumbers, scallions, red chili peppers, and cilantro leaves.

Notes

  • For a more flavorful rice, cook it in the reserved chicken broth instead of using plain chicken broth.
  • For a spicier sauce, add more red chili peppers or chili oil.
  • This recipe can also be made with bone-in chicken pieces.
