Ingredients

  • 1 tbsp ghee

Method

  1. Wash the rice and soak it in water for 20-30 minutes.
  2. Drain the water and keep the rice aside.
  3. Heat ghee in a heavy-bottomed saucepan over medium heat.
  4. Add the rice and stir-fry for 2-3 minutes.
  5. Add milk and heavy cream to the saucepan and bring it to a boil.
  6. Lower the heat to a simmer and cook for about 30-35 minutes, stirring occasionally.
  7. Add sugar, cardamom powder, almonds, pistachios, and raisins to the saucepan and cook for another 10-15 minutes, stirring occasionally.
  8. The rice pudding should have a thick and creamy consistency. If it's too thick, you can add some more milk to adjust the consistency.
  9. Turn off the heat and let it cool down for a while.
  10. Transfer the rice pudding to a serving bowl and garnish with some chopped almonds and pistachios.
  11. Serve it chilled or at room temperature.

  • You can use any type of rice for this recipe, but Basmati rice works best.
  • You can adjust the amount of sugar according to your taste.
  • You can add other dry fruits like cashews, walnuts or dates to the pudding.
