Ingredients

  • 1 cup bamboo rice
  • 2 cups water
  • 1 onion, chopped
  • 1 tomato, chopped

  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1 tbsp oil
  • Salt to taste

Method

  1. Wash the bamboo rice in cold water and soak it for 10 minutes.
  2. In a pot, add the soaked rice and 2 cups of water. Bring it to a boil and then reduce the heat to low. Cover the pot and let the rice cook for 20 minutes or until it is cooked through.
  3. In a pan, heat oil and add cumin seeds. Once they start to splutter, add chopped onions and sauté until they turn translucent.
  4. Add ginger-garlic paste and sauté for a minute.
  5. Add chopped tomatoes and green chili. Cook until the tomatoes become soft and mushy.
  6. Add coriander powder, red chili powder, and garam masala. Mix well and cook for 2-3 minutes.
  7. Add the cooked bamboo rice to the pan and mix well. Add salt to taste.
  8. Cover the pan and let it cook for 5-10 minutes on low heat.
  9. Garnish with chopped coriander leaves and serve hot.
