Ingredients

  • 2 Tbsp. vegetable oil
  • 2 eggs, beaten
  • 1/2 cup frozen peas and carrots, thawed
  • 1/4 cup chopped green onions
  • Salt and pepper, to taste

Equipment

  • Wok or large frying pan
  • Cutting board
  • Knife
  • Bowl
  • Measuring cups and spoons

Method

  1. Heat the wok or frying pan over high heat and add the vegetable oil.
  2. Add the pork and garlic and stir-fry until the pork is cooked through, about 5 minutes.
  3. Add the barbecue sauce and soy sauce to the pan and stir to combine with the pork.
  4. Push the pork to the side of the pan and add the beaten eggs to the other side of the pan.
  5. Scramble the eggs until they are cooked through and then mix them together with the pork.

  7. Add the peas and carrots to the pan and stir-fry for an additional 2-3 minutes.
