- 2 Tbsp. vegetable oil
- 2 eggs, beaten
- 1/2 cup frozen peas and carrots, thawed
- 1/4 cup chopped green onions
- Salt and pepper, to taste

- Wok or large frying pan

Method
- Heat the wok or frying pan over high heat and add the vegetable oil.
- Add the pork and garlic and stir-fry until the pork is cooked through, about 5 minutes.
- Add the barbecue sauce and soy sauce to the pan and stir to combine with the pork.
- Push the pork to the side of the pan and add the beaten eggs to the other side of the pan.
- Scramble the eggs until they are cooked through and then mix them together with the pork.
- Add the cooked rice to the pan and stir-fry with the pork and eggs for 2-3 minutes.
- Add the peas and carrots to the pan and stir-fry for an additional 2-3 minutes.
- Season with salt and pepper to taste.
