Ingredients

  • 2 cups basmati rice
  • 4 cups water
  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen peas
  • 1/2 cup sliced almonds, toasted
  • 2 tablespoons fresh parsley, chopped

Equipment

  • Large pot with lid
  • Frying pan
  • Saucepan

Method

  1. Rinse the basmati rice several times until the water runs clear, then soak it in water for at least 30 minutes before cooking.
  2. In a large pot, heat the vegetable oil over medium heat. Add the diced onion and sauté until it is soft and translucent, about 5 minutes.
  3. Add the minced garlic, ground cumin, ground coriander, ground cinnamon, ground cardamom, ground turmeric, salt, and black pepper to the pot. Stir well and cook for 1-2 minutes until the spices are fragrant.
  4. Drain and add the soaked rice to the pot, then stir well to coat the rice with the spice mixture.
  5. Add 4 cups of water to the pot and bring to a boil. Reduce the heat to low, cover the pot with a lid, and simmer for 20-25 minutes until the rice is cooked and the water has been absorbed.
  6. In a frying pan, toast the sliced almonds over medium heat until they are golden brown and fragrant, about 5 minutes.
  7. Add the frozen peas to the pot with the rice and stir well. Cover the pot and cook for an additional 5 minutes until the peas are heated through.
  8. Remove the pot from the heat and let it sit for 5 minutes, then fluff the rice with a fork.
  9. Top the rice with the toasted almonds and chopped parsley before serving.

Notes

  • You can add other vegetables like carrots or bell peppers to the dish to make it more colorful and nutritious.
  • You can also use chicken or vegetable broth instead of water for a richer flavor.
  • If you don't have basmati rice, you can use any long-grain rice, but the flavor and texture of the dish may be slightly different.

Recipe Tips

  • Make sure to rinse the basmati rice several times before soaking it, as this will remove excess starch and prevent the rice from becoming mushy.
  • Use a large pot with a tight-fitting lid to prevent steam from escaping during cooking.
  • If you don't have a frying pan, you can toast the almonds in the oven at 350°F for 5-7 minutes.
  • Be careful not to overcook the rice, as it will become mushy and lose its texture.
  • You can serve this dish with some yogurt or raita on the side to balance out the spices and add some creaminess.

Enjoy your delicious and aromatic basmati rice pilaf!
