Method

  1. Preheat your oven to 375°F.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up into small pieces as it cooks.
  3. Add the black beans, cumin, chili powder, garlic powder, salt, and pepper to the skillet. Stir to combine and cook for an additional 2-3 minutes.
  4. Remove the skillet from the heat and stir in the cooked white rice.
  5. Pour 1/3 of the enchilada sauce into the bottom of a baking dish.
  6. Take a flour tortilla and spoon 1/4 cup of the beef and bean mixture into the center. Roll the tortilla up and place it seam-side down in the baking dish. Repeat with the remaining tortillas and filling.
  7. Pour the remaining enchilada sauce over the top of the rolled tortillas.
  8. Sprinkle the shredded cheddar cheese over the top of the enchiladas.
  9. Cover the baking dish with aluminum foil and bake for 25 minutes.
  10. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  11. Serve hot and enjoy!
