Ingredients

  • 3 cups cooked white rice, cold
  • 3 tbsp butter
  • 3 cloves of garlic, minced

  • 2 chicken breasts, boneless and skinless, cut into small pieces
  • 1/4 cup soy sauce
  • 2 eggs, lightly beaten
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Method

  1. Heat 1 tbsp of butter in a large skillet or wok over medium heat.

  4. Add the diced carrots and frozen peas and cook for another 2-3 minutes until the vegetables are tender.
  5. Push the vegetables to one side of the pan and add the chicken to the other side.
  6. Cook the chicken for 5-7 minutes until browned and cooked through.
  7. Add the cold rice to the pan and stir to combine with the vegetables and chicken.
  8. Add the soy sauce and stir to coat the rice and chicken evenly.
  9. Push the rice mixture to one side of the pan and add the remaining 2 tbsp of butter to the other side.
  10. Add the beaten eggs to the butter and scramble until cooked through.
  11. Once the eggs are cooked, stir them into the rice mixture.
  12. Add the chopped green onions and stir to combine.
  13. Season with salt and pepper to taste.
  14. Serve hot and enjoy!

  • This recipe can easily be adapted to include your favorite vegetables or proteins.
