- 4 cups chicken broth
- 1 cup uncooked white rice
- 2 cups cooked chicken, shredded
- 2 cups chopped carrots
- 2 cups chopped celery
- Salt and pepper to taste

Method
- In a Dutch oven or large soup pot, heat the olive oil over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
