- 1 pound shrimp, peeled and deveined
- 1 pound chicken sausage, sliced
- Salt and pepper, to taste

Method
- Heat the olive oil in a Dutch oven or large pot over medium heat.
- Add the onion and bell peppers and cook for 5-7 minutes, until softened.
- Add the garlic and cook for another minute, until fragrant.
- Add the brown rice and stir to coat in the oil and vegetables.
- Add the vegetable broth, diced tomatoes, and Cajun seasoning. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low and cover the pot.
- Simmer for 35-40 minutes, until the rice is cooked through and the liquid is absorbed.
- While the rice is cooking, cook the shrimp and sausage in a separate skillet until browned and cooked through.
- Once the rice is done, stir in the cooked shrimp and sausage.
- Season with salt and pepper to taste.
