Ingredients

  • 4 cups of water
  • 2 stalks of lemongrass, bruised
  • 4 slices of ginger
  • 1 tablespoon of salt
  • 2 cups of jasmine rice
  • 2 tablespoons of chicken fat or vegetable oil
  • 2 cloves of garlic, minced
  • 1 pandan leaf, tied into a knot
  • 1 tablespoon of oyster sauce
  • 1 tablespoon of soy sauce
  • 1 teaspoon of sesame oil
  • 1 teaspoon of salt
  • 1 cucumber, sliced
  • 1 tomato, sliced
  • 1 bunch of coriander, chopped

Equipment

  • A large pot
  • A rice cooker
  • A wok or frying pan
  • A small bowl

Method

Step 1: Poach the Chicken

1. Rinse the chicken inside and out with cold water and pat dry. 2. In a large pot, add 4 cups of water, lemongrass, ginger, and salt. Bring to a boil. 3. Add the chicken to the pot, breast-side down. The water should cover the chicken. If not, add more water. 4. Reduce the heat to low and cover the pot. Simmer for 30 minutes. 5. Turn off the heat and let the chicken sit in the pot for another 30 minutes. 6. Remove the chicken from the pot and place it in a bowl of ice water for 5 minutes. This will stop the cooking process and make the skin more tender. 7. Remove the chicken from the ice water and pat dry. Rub the chicken with sesame oil.

Step 2: Cook the Rice

1. Rinse the rice in cold water until the water runs clear. Drain. 2. In a rice cooker, add the rice, chicken fat or vegetable oil, garlic, and pandan leaf. Stir well. 3. Add 2 cups of chicken broth from the poached chicken and 2 cups of water. Stir well. 4. Turn on the rice cooker and let it cook.

Step 3: Make the Sauce

1. In a small bowl, mix together oyster sauce, soy sauce, sesame oil, and salt. 2. Set aside.

Step 4: Serve the Dish

1. Cut the chicken into bite-sized pieces and arrange them on a plate. 2. Serve the chicken with the rice, cucumber, tomato, and coriander. 3. Drizzle the sauce over the chicken and rice. 4. Enjoy!

Notes

You can use chicken stock instead of water to cook the rice for a richer flavor. You can also add some chopped garlic and ginger to the rice for extra fragrance.
