Method

  1. Begin by rinsing the rice under cold water until the water runs clear. Set aside.
  2. Set the Instant Pot to sauté mode and add the vegetable oil. Once hot, add the diced onion and green bell pepper. Sauté for 3-4 minutes until the vegetables are soft.
  3. Add the minced garlic, ground cumin, chili powder, and salt. Cook for an additional 1-2 minutes until fragrant.
  4. Add the can of diced tomatoes and stir to combine.
  5. Add the rinsed rice to the Instant Pot and stir until the rice is coated in the tomato mixture.
  6. Add the chicken broth and stir to combine.

  8. Set the Instant Pot to manual high pressure for 8 minutes. Once the cooking time is complete, allow the Instant Pot to naturally release pressure for 10 minutes before manually releasing any remaining pressure.
  9. Fluff the rice with a fork and serve.

Notes

This recipe is easily customizable. If you prefer a spicier rice, add more chili powder or a diced jalapeño. If you want to make it vegetarian, swap the chicken broth for vegetable broth.
