- 2 tbsp ghee
- 2 tbsp oil

- 4 cloves
- 4 cardamom pods
- 1 cinnamon stick

Method
- Wash the basmati rice and soak it in water for 30 minutes.
- In a large pot, heat the ghee and oil over medium heat.
- Once the oil is hot, add the bay leaves, cloves, cardamom pods, and cinnamon stick. Fry for a few seconds until the spices are fragrant.
- Add the sliced onions and fry until they are golden brown.
- Add the ginger-garlic paste and fry for a minute.
- Add the chopped tomatoes and fry until they are soft and mushy.
- Add the biryani masala powder, turmeric powder, red chili powder, and salt. Fry for a minute.
- Add the chicken pieces and fry for 5-7 minutes until they are browned on all sides.
- Drain the water from the soaked basmati rice and add it to the pot. Mix well.
- Add enough water to cover the rice and chicken. Bring to a boil.
- Cover the pot with a tight-fitting lid and reduce the heat to low. Cook for 20-25 minutes until the rice is cooked and the chicken is tender.
- Garnish with coriander leaves and serve hot.
