- 1 kg mutton, cut into small pieces
- 3 cups Basmati rice
- 3 onions, sliced thinly
- 1 cup yogurt
- 2 tbsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp red chili powder
- 1 tsp garam masala powder
- 1 tsp turmeric powder
- 1 cup chopped mint leaves
- 1 cup chopped coriander leaves
- 1/2 cup ghee
- 2 bay leaves
- 4-5 cloves
- 2 cinnamon sticks
- 4-5 green cardamom pods
- 1 tsp saffron
- Salt to taste

Method
- Wash the Basmati rice in cold water and soak it in water for 30 minutes.
- In a large pot, heat the ghee and add the sliced onions. Fry them until golden brown and crispy. Remove from the pot and set aside.
- In the same pot, add the mutton and cook until it turns brown. Add the ginger-garlic paste and cook for 2-3 minutes.
- Add the cumin seeds, coriander powder, red chili powder, turmeric powder, and garam masala powder. Mix well and cook for 5 minutes.
- Add the yogurt, mint leaves, and coriander leaves. Mix well and cook for another 5-7 minutes.
- In a saucepan, boil 6 cups of water. Add the soaked Basmati rice and cook until it is half done. Drain the water and set aside.
- In a small bowl, soak the saffron in 1/4 cup of warm milk for 10 minutes.
- Now, assemble the Biryani. In the large pot, layer half of the cooked rice. Sprinkle half of the saffron milk over the rice. Then, layer half of the mutton curry on top.
- Repeat the layering process with the remaining rice, saffron milk, and mutton curry.
- Sprinkle the caramelized onions over the top and cover the pot with a tight-fitting lid.
- Cook on low heat for 45-50 minutes or until the rice is fully cooked and the mutton is tender.
- Once done, remove from heat and let it rest for 10 minutes before serving.
Notes
- You can adjust the amount of spices according to your taste preferences.
- If you don't have saffron, you can use food coloring to give the rice a yellow color.
- It's important to cook the rice only until it's half done, as it will continue to cook with the mutton later.
