For the beef marinade:- 1 lb. beef, cut into small pieces
- 1 cup plain yogurt
- 1 tablespoon ginger garlic paste
- 1 teaspoon red chili powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- Salt, to taste
- 2 cups basmati rice
- 3 cups water
- 1 bay leaf
- 4 cloves
- 4 green cardamom
- 1 cinnamon stick
- 1 teaspoon cumin seeds
- Salt, to taste
- 2 onions, sliced
- 4 tablespoons oil
- 1 tablespoon ginger garlic paste
- 1 teaspoon red chili powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- Salt, to taste
- Fresh cilantro, chopped
- Fried onions, for garnish

Method
- In a bowl, mix together all the ingredients for the beef marinade. Add the beef and mix well. Cover and refrigerate for at least 2 hours or overnight.
- Rinse the rice until the water runs clear. Soak the rice in water for 30 minutes. Drain and set aside.
- In a large pot, heat oil over medium heat. Add the sliced onions and sauté until golden brown. Remove half of the onions and set aside for garnish.
- Add the ginger garlic paste to the pot and sauté for a minute. Add the red chili powder, cumin powder, coriander powder, garam masala, and salt. Cook for a minute until fragrant.
- Add the marinated beef and cook for 10-15 minutes until the beef is cooked through and tender. Remove the beef from the pot and set aside.
- In the same pot, add the soaked and drained rice. Add water, bay leaf, cloves, green cardamom, cinnamon stick, cumin seeds, and salt. Bring to a boil, cover and simmer for 15-20 minutes or until the rice is cooked and fluffy.
- Add the cooked beef on top of the rice. Sprinkle chopped cilantro and fried onions on top. Cover and simmer on low heat for 10-15 minutes to allow the flavors to blend together.
- Garnish with the reserved fried onions and serve hot.
Notes
- You can use lamb or chicken instead of beef.
- You can adjust the spice level according to your taste.
