Ingredients

For the beef marinade:
  • 1 lb. beef, cut into small pieces
  • 1 cup plain yogurt
  • 1 tablespoon ginger garlic paste
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt, to taste
For the rice:
  • 2 cups basmati rice
  • 3 cups water
  • 1 bay leaf
  • 4 cloves
  • 4 green cardamom
  • 1 cinnamon stick
  • 1 teaspoon cumin seeds
  • Salt, to taste
For the Biryani:
  • 2 onions, sliced
  • 4 tablespoons oil
  • 1 tablespoon ginger garlic paste
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt, to taste
  • Fresh cilantro, chopped
  • Fried onions, for garnish

Equipment

  • Large pot with lid
  • Frying pan
  • Bowl
  • Knife

  • Measuring cups and spoons

Method

  1. In a bowl, mix together all the ingredients for the beef marinade. Add the beef and mix well. Cover and refrigerate for at least 2 hours or overnight.
  2. Rinse the rice until the water runs clear. Soak the rice in water for 30 minutes. Drain and set aside.
  3. In a large pot, heat oil over medium heat. Add the sliced onions and sauté until golden brown. Remove half of the onions and set aside for garnish.
  4. Add the ginger garlic paste to the pot and sauté for a minute. Add the red chili powder, cumin powder, coriander powder, garam masala, and salt. Cook for a minute until fragrant.
  5. Add the marinated beef and cook for 10-15 minutes until the beef is cooked through and tender. Remove the beef from the pot and set aside.
  6. In the same pot, add the soaked and drained rice. Add water, bay leaf, cloves, green cardamom, cinnamon stick, cumin seeds, and salt. Bring to a boil, cover and simmer for 15-20 minutes or until the rice is cooked and fluffy.
  7. Add the cooked beef on top of the rice. Sprinkle chopped cilantro and fried onions on top. Cover and simmer on low heat for 10-15 minutes to allow the flavors to blend together.
  8. Garnish with the reserved fried onions and serve hot.

Notes

  • You can use lamb or chicken instead of beef.
  • You can adjust the spice level according to your taste.
  • You can add vegetables like peas, carrots, and potatoes to the biryani for a more filling meal.
