Description

Spanish rice, also known as Mexican rice, is a popular side dish that goes well with many Mexican-inspired meals. It's a simple dish made from rice, tomatoes, onions, and a few other ingredients.

Prep Time

15 minutes

Cook Time

30 minutes

Ingredients

  • 1 cup long-grain white rice
  • 1 tablespoon vegetable oil
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 2 cups chicken broth
  • 1/4 cup chopped fresh cilantro (optional)

Equipment

  • Large saucepan with lid
  • Cutting board
  • Knife
  • Measuring cups and spoons
  • Wooden spoon

Method

  1. Rinse the rice in a fine mesh strainer until the water runs clear.
  2. Heat the oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the rice to the saucepan and stir to coat with the onion and garlic mixture.
  4. Add the diced tomatoes, chili powder, cumin, and salt. Stir to combine.
  5. Add the chicken broth and bring the mixture to a boil.
  6. Reduce the heat to low and cover the saucepan with a lid. Simmer for 20-25 minutes, or until the rice is tender and the liquid has been absorbed.
  7. Remove the saucepan from the heat and let it sit, covered, for 5 minutes.
  8. Fluff the rice with a fork and stir in the cilantro, if desired.
  9. Serve hot.

Notes

  • You can substitute vegetable broth for the chicken broth to make this recipe vegetarian.
  • If you don't have chili powder or cumin, you can use a packet of taco seasoning instead.
  • If you want to make this recipe spicier, add a diced jalapeƱo pepper to the onion and garlic mixture.

Recipe Tips

  • Make sure to rinse the rice before cooking to remove excess starch and prevent it from becoming too sticky.
  • Use a large saucepan with a tight-fitting lid to ensure that the rice cooks evenly and absorbs all of the liquid.
  • Stir the rice occasionally while it's cooking to prevent it from sticking to the bottom of the saucepan.
  • Let the rice sit for 5 minutes after cooking to allow it to absorb any remaining liquid and become fluffier.
  • Top with chopped fresh cilantro or a squeeze of lime juice for added flavor.
