Ingredients

  • 1 package of brown rice lasagna noodles
  • 3 cups of chopped vegetables (such as mushrooms, zucchini, and bell peppers)
  • 2 cups of tomato sauce
  • 1 cup of ricotta cheese
  • 1 cup of shredded mozzarella cheese
  • 1/4 cup of grated Parmesan cheese
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste

Method

  1. Preheat the oven to 375°F.
  2. Boil a large pot of water and cook the brown rice lasagna noodles according to the package instructions. Drain and set aside.
  3. Heat the olive oil in a frying pan over medium heat. Add the minced garlic and cook until fragrant.
  4. Add the chopped vegetables to the pan and cook until they are tender.
  5. Add the tomato sauce, dried oregano, salt, and pepper to the pan and stir to combine.
  6. In a separate bowl, mix together the ricotta cheese and grated Parmesan cheese.
  7. Spread a thin layer of the tomato sauce mixture on the bottom of a baking dish.
  8. Place a layer of cooked brown rice lasagna noodles on top of the sauce.
  9. Spoon half of the ricotta cheese mixture on top of the noodles.
  10. Add another layer of brown rice lasagna noodles on top of the cheese mixture.
  11. Add another layer of the tomato sauce mixture on top of the noodles.
  12. Sprinkle half of the shredded mozzarella cheese on top of the sauce.
  13. Repeat the layers, starting with the brown rice lasagna noodles and ending with the shredded mozzarella cheese.
  14. Cover the baking dish with foil and bake for 30 minutes.
  15. Remove the foil and bake for an additional 15 minutes or until the cheese is melted and bubbly.
  16. Let the lasagna cool for a few minutes before slicing and serving.

Notes

  • You can use any vegetables you like in this recipe. Just make sure they are chopped into small pieces so they cook evenly.
  • If you don't have brown rice lasagna noodles, you can use regular lasagna noodles or any other type of pasta you prefer.
