- 1 can black beans, drained and rinsed
- 1 small onion, diced

- 1/4 teaspoon black pepper
- 2 cups water
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges

Method
- Rinse the brown rice under cold water until the water runs clear. Drain well.

- Bring the mixture to a boil, then reduce the heat to low, cover the saucepan with a lid, and simmer for 25-30 minutes until the rice is tender and the liquid has been absorbed.
- Remove the saucepan from the heat and let it sit, covered, for 5 minutes.
- Fluff the rice with a fork, and stir in the chopped cilantro.
- Serve the black bean brown rice hot, with a wedge of lime on the side.
Notes
