Ingredients

  • 2 tablespoons of fresh coriander, chopped

Method

  1. Start by washing the rice thoroughly and soaking it in water for about 30 minutes.
  2. Heat the vegetable oil in a large pot over medium heat.
  3. Add the chopped onion and minced garlic and sauté until the onion is translucent.
  4. Add the cumin seeds, coriander powder, red chilli powder, salt, black pepper, and garam masala to the pot and stir well.
  5. Drain the rice and add it to the pot. Fry the rice for a few minutes until it is lightly toasted.
  6. Add the chicken stock to the pot and bring it to a boil.
  7. Reduce the heat to low, cover the pot, and simmer for about 15 minutes or until the rice is cooked.
  8. While the rice is cooking, heat a skillet over medium-high heat.
  9. Add the shredded BBQ chicken and frozen mixed vegetables to the skillet and sauté until the vegetables are cooked through.
  10. Once the rice is cooked, add the BBQ chicken and vegetable mixture to the pot and stir well.
  11. Garnish with fresh coriander and serve hot.

  • This recipe can easily be doubled or tripled to feed a larger crowd.
  • If you don't have chicken stock, you can use water or vegetable stock instead.
