Ingredients

  • 2 cups basmati rice
  • 3 cups water
  • 1 onion, sliced

  • 4 cloves
  • 4 cardamom pods
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon salt
  • 2 cups mixed vegetables (carrots, peas, beans, potatoes, etc.)
  • 1/2 cup cashews, roasted
  • 1/4 cup raisins, soaked in water
  • 2 tablespoons chopped cilantro leaves

Method

  1. Rinse the rice in cold water until the water runs clear. Soak the rice in water for 30 minutes.
  2. Heat the oil in a large pot over medium heat. Add the cumin seeds, cinnamon sticks, cloves, and cardamom pods. Fry for 1 minute.
  3. Add the sliced onion and fry until golden brown, stirring frequently.
  4. Add the turmeric powder, red chili powder, coriander powder, and salt. Fry for 1 minute.
  5. Add the mixed vegetables and fry for 3-4 minutes.
  6. Drain the water from the soaked rice and add it to the pot. Fry for 5 minutes.
  7. Add 3 cups of water and stir well. Bring to a boil.
  8. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes until the rice is cooked and the water is absorbed.
  9. In a frying pan, roast the cashews until golden brown. Drain the water from the soaked raisins.
  10. Once the rice is cooked, fluff it with a fork. Add the roasted cashews, soaked raisins, and chopped cilantro leaves. Stir well.
  11. Remove from heat and let it rest for 5 minutes before serving.
