- 4 cups water
- 1 cup coconut milk
- 1/2 cup palm sugar
- 1/4 teaspoon salt
- 1 pandan leaf (optional)

Method
- Rinse the black glutinous rice until the water runs clear.
- In a large pot, combine the rice, water, salt, and pandan leaf (if using).
- Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
- Simmer the rice for 45 minutes to 1 hour, or until the rice is tender and the liquid has been absorbed.
- Add the coconut milk and palm sugar to the pot and stir to combine.
- Continue to cook the rice on low heat, stirring occasionally, for an additional 10-15 minutes or until the pudding has thickened.
- Remove the pandan leaf from the pot and discard.
- Serve the black rice pudding warm or chilled, topped with coconut cream or fresh fruit.
Notes
