Add the chopped onions and sauté till they turn translucent. 7. Add the ginger-garlic paste and sauté for a minute. 8. Add the chopped tomatoes and green chilies and sauté till the tomatoes turn soft. 9. Add the chopped brinjals and sauté for 5 minutes. 10. Add the coriander powder, cumin powder, garam masala, turmeric powder, and salt to taste. Mix well. 11. Add the soaked rice and mix well. 12. Add 2 cups of water and mix well. 13. Close the lid of the pressure cooker or the pan and cook on medium heat for 2 whistles in a pressure cooker or for 15 minutes in a heavy-bottomed pan. 14. Switch off the heat and let the pressure release naturally. 15. Open the lid and fluff the rice with a fork. 16. Garnish with coriander leaves and serve hot.
