Ingredients

Method

  1. Wash the black rice in cold water and soak it for at least 30 minutes.
  2. Drain the rice and add it to a large saucepan with 4 cups of milk.
  3. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30-35 minutes, stirring occasionally.
  4. Add the sugar and cardamom powder to the pan and stir until the sugar has dissolved.
  5. Continue to simmer the mixture for another 10-15 minutes, or until the rice is cooked and the kheer has thickened.
  6. While the kheer is cooking, heat the ghee in a frying pan over medium heat.
  7. Add the chopped almonds, cashews, and pistachios to the pan and fry for 1-2 minutes, or until they are golden brown.
  8. Add the raisins to the pan and fry for another 1-2 minutes, or until they are plump and slightly browned.
  9. Remove the kheer from the heat and let it cool slightly.
  10. Transfer the kheer to a bowl and garnish with the fried nuts and raisins.
  11. Refrigerate the kheer for at least 1 hour before serving.
