Description

Baked glutinous rice cake, also known as Bah-Tzang, is a traditional Chinese delicacy that is usually served during special occasions such as the Dragon Boat Festival. This cake is made of glutinous rice, filled with savory or sweet ingredients, wrapped in bamboo leaves, and then baked until it becomes fragrant and chewy.

Ingredients

  • 2 pounds glutinous rice
  • 1/4 cup dried shrimp
  • 1/4 cup dried Shiitake mushrooms
  • 1/4 cup dried chestnuts
  • 1/4 cup dried lotus seeds
  • 1/4 cup dried shallots
  • 1/4 cup dried scallops
  • 1/4 cup dried Chinese sausage, diced
  • 1/4 cup dried shrimp, soaked and diced
  • 1/4 cup soy sauce
  • 1/4 cup oyster sauce
  • 2 tablespoons dark soy sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper
  • 20-30 bamboo leaves, soaked

Equipment

  • Steamer basket

Method

  1. Wash and soak the glutinous rice in water for at least 4 hours or overnight.
  2. Soak the dried shrimp, Shiitake mushrooms, chestnuts, lotus seeds, shallots, and scallops in water for at least 2 hours or until soft.
  3. Heat the vegetable oil in a large pot or wok over medium-high heat. Add the diced Chinese sausage and dried shrimp, and stir-fry for 1-2 minutes or until fragrant.
  4. Add the soaked dried ingredients and continue stir-frying for another 2-3 minutes.
  5. Add the soy sauce, oyster sauce, dark soy sauce, sugar, salt, and white pepper. Stir well and cook for another 3-5 minutes or until the mixture is well combined.
  6. Add the cornstarch and stir well until the mixture thickens. Remove from heat and set aside.
  7. Drain the glutinous rice and mix it with the prepared filling.
  8. Take 2 bamboo leaves and overlap them to form a cone shape. Fill the cone with the rice filling and press it down firmly.
  9. Wrap the bamboo leaves around the rice cone, and tie it with kitchen twine. Repeat until all the rice filling is used up.
  10. Place the wrapped rice cones in a steamer basket and steam for about 30 minutes or until the rice is fully cooked.
  11. Preheat the oven to 350°F.
  12. Remove the steamed rice cones from the steamer basket and arrange them in a baking dish. Bake in the oven for about 30 minutes or until the bamboo leaves turn brown and the rice cake becomes fragrant.
  13. Remove from the oven and let it cool for a few minutes before serving.

  • You can store the baked glutinous rice cake in the refrigerator for up to 4 days.
  • You can also freeze the baked glutinous rice cake for up to 2 months. Just reheat it in the oven or microwave before serving.
