Ingredients

For the burgers:
  • 1 can black beans, drained and rinsed
  • 1 cup cooked wild rice
  • 1/2 cup bread crumbs
  • 1/2 cup finely chopped onion
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg, beaten
  • 4 hamburger buns
  • Lettuce, tomato, and other burger toppings, as desired
For the aioli:
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • Salt and pepper, to taste

Equipment

  • Large bowl
  • Baking sheet
  • Frying pan
  • Food processor (optional)

Method

1. Preheat the oven to 375°F (190°C). 2. In a large bowl, combine the black beans, wild rice, bread crumbs, onion, parsley, garlic, cumin, smoked paprika, salt, pepper, and egg. Mix well. 3. Divide the mixture into 4 equal portions and shape them into patties. 4. Place the patties on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown and firm to the touch. 5. While the burgers are baking, prepare the aioli. In a small bowl, whisk together the mayonnaise, Dijon mustard, honey, garlic, lemon juice, salt, and pepper until smooth. 6. Heat a frying pan over medium-high heat. Add the burgers and cook for 3-4 minutes per side, or until lightly browned. 7. Toast the hamburger buns and assemble the burgers with the aioli, lettuce, tomato, and any other toppings you desire.

Notes

If you don't have cooked wild rice on hand, you can use a wild rice blend or brown rice instead. To make the burgers gluten-free, use gluten-free bread crumbs or omit them altogether. If you don't have a food processor, you can mash the black beans with a fork or potato masher.
